Banana & Chocolate Chip Protein Breakfast Muffins Recipe

Special Equipment: muffin tin, muffin cases, whisk
Ingredients you'll need:

1. Let's get started
A) Preheat the oven to 180°c/ 350F
B) Line a muffin tin with 10-12 muffin cases and set aside. (Tip: If you don't have a muffin tin, use a baking tray with rubber muffin cases to provide additional support)
2. Time to get messy
A) Use a large mixing bowl, mix together the oat flour, baking powder and vanilla protein powder.
B) Next, use a fork to mash the ripened bananas into a paste.
C) Add the banana paste, peanut butter, honey, apple sauce and eggs into the mixing bowl and mix for 3 mins until fully combined. (Tip: you can use a blender to mix the ingredients for 45 seconds if available)
D) Add the chocolate chips to the bowl and use your mixing spoon to fold the chocolate chips into the mixture.
3. Let's get these in the oven
A) Spoon the mixture evenly into each muffin case
B) Put the tin into the oven and cook for 12-15 minutes
C) Once lightly golden, take the muffins out of the oven and leave to cool for 5 minutes
