Student Recipes: Students' Ultimate Mac & Cheese

This week's free recipe is our version of the ultimate Mac & Cheese (we'll think you'll love it!). You can get all of the ingredients for this recipe delivered to you at university by adding this recipe to your weekly student recipe box.

Our ultimate go-to Mac & Cheese recipe is the recipe which every student must bookmark for a rainy day. We combine two types of cheese with crispy bacon to give Mac & Cheese a tantalising Gastrostudent twist. Gooey cheese is topped with breadcrumbs for a crunch. Pop it in the oven and watch the cheese melt and turn golden brown. Yes, your dreams have come true!

Students' Ultimate Mac & Cheese Recipe

Ingredients You'll Need:

1. Let's get started

boiling macaroni

a) Boil a kettle with approximately 300ml water 

b) Once boiled, add a pinch of salt. Add the macaroni to a pot of boiled water and bring to the boil over a high heat

c) Cook the macaroni for 8-10 mins and drain using a colander or sieve (tip: macaroni should have a slight bite and not be mushy!) Keep cooked macaroni to one side

2. Chop chop

a) Meanwhile, cut the bacon into small pieces

b) Peel and grate the garlic

c) Grate the mature cheddar cheese

3. Crispy bacon


a) Heat a large frying pan over a high heat. Once hot, add half of the chopped bacon to the pan

b) Cook for 3-4 min until crispy and set aside until later

4. Cheesy sauce

a) Turn down the hob to medium heat. Use the same frying pan, add butter and melt

b) Once melted, add flour and stir with a spoon for 2 mins until you have a paste

c) Slowly add 175ml milk to the paste and cook for 5-6 mins until you have a thick sauce

5. Oven prep

a) Meanwhile, preheat the oven to 220°C/ 475°F 

6. Almost there

a) Once your sauce is cooked, add the grated garlic, salt and pepper 

b) Slowly, stir in the mustard powderItalian grated hard cheese, grated mature cheddar cheese, crispy bacon

c) Now, add the cooked macaroni to the pan with a splash of water and stir

7. Get it in the oven!

a) Pour the macaroni and cheese sauce into an oven-proof dish

b) Sprinkle over the breadcrumbs and the other half of the chopped bacon 

c) Cook in the oven for 25-30 mins until crispy and golden brown

Remove from the oven, plate up and dig in! This is your Students' Ultimate Mac & Cheese!
